When are cayenne peppers ready for harvest?
Growing cayenne pepper in Saint Augustine, Florida. I thought that the plant was a victim of a random hard freeze...the plant is hardy and survived...when are the peppers ready for harvest?

The peppers will go through stages of ripeness from light green to dark red. Most people harvest at this dark or "bright" red stage. They can be harvested at any stage, but will be hottest at the green stage. So it is really your choice. I harvest my Cayennes at red and my Jalapenos at green.
