I am growing giant sunflowers and they have started budding. My question is do I pinch out any of the buds in order to make the existing bud bigger and better?

I agree, pinching won't affect the blooms.

I think if you do that you won't get a giant sunflower, just lots of small sunflowers. I'm growing them too and leaving them well alone. However if you mean little buds forming on the side of the plant, I'd pinch them out so the plant can concentrate on one big flower in the middle.
