Once upon a time (about nowish) it had been snowing.
Lulu was snowed in due to ridiculously long drive here at the stud. Ah I know, I think..lets do my long overdue garlic butter blog!
Having rummaged around trying to find photos taken during the summer…finally find some!
So here goes!

It’s garlic butter with a twist because it’s chilli spicy and full of coriander leaves and it always goes down well. In fact I made lots of dessert spoon sized frozen butters for my Sisters birthday!

Take a sharp serrated knife and some beautiful, fresh red chillies. You can either de seed them or slice finely with seeds for that extra kick! I used 2 large chillies and found it quite spicy enough!

Fresh garlic, crushed with a little sea salt…about 3 large cloves…

And some salted butter, the best, tastiest butter is best.

Here is the garlic chopped and about to go into rather nice wooden pestle and mortar!

Trimmings go into compost bin.

De seeding chillies using pretty spoon (had said spoon for 3 years…first time I’ve used it…looks pretty for garlic butter photoshoot!

Here are a few artistic chilli chopping shots (try saying that after a couple of glasses of wine!)

Take 2 handfuls of fresh coriander and chop or use posh scissors like I was given a few Christmasses ago. Normal scissors work equally well and take less washing up!

Now mix all those scrummy ingredients together with at about 4oz of softened butter and hey presto! Yummy garlic butter with a twist! Spread onto bread of choice (I use foccacia) and grill till melted and slightly crisp.

It was so good that I didn’t manage to photograph the end product because it all got eaten when my back was turned…or maybe it was those folk who visited from Grows on You!!!

Nice one Lulu, I grow both garlic & chillis you know so it's straight into faves for future pop at your receipe. There wont be non of that de seeding malarky I can tell you !! whew !! I can taste it already !!

A "yummy light meal" would be great Lulu33 :) You have made my tummy rumble...I have consumed all my calories for the day...and a few more besides...and nibbled on my finger nails (Yuk!)...so came on line to distract myself...and what's the first thing I come across??? While tossing and turning trying to sleep last night I tried to imagine making it with low fat spread!! It goes a bit watery when melted!
Thanks for looking and maybe giving it a try DB & Paul.

An idea for a low cal meal would be steamed fish wrapped in tin foil along with the coriander, garlic and chilli and instead of butter, use lemon and lime juice. Just as yummy. I use that version for my other half who is training for the London marathon!

Many thanks for the low fat meal idea Lulu33 :) I won't be running any marathons this year (best of luck to your O.H. by the way...) but will be "Mother-of-the-Bride" in a few months time...so will relish your steamed fish recipe and hope it helps to shed those excess pounds!

P.S. Still starving here...and dreaming of garlic bread, lol :)

I used 2 chooks instead of one! And yes, your'e right, the egg is used for clarifying. I used part of an old mosquito net as I didn't have any muslin! Worked a treat!

Easy peasy.
The small lemons are not often sold in the shops.
If you buy unwaxed lemons, cut a cross but only 3/4 of the way down. Pack with a tbsp of salt each one and pack into a jar. Leave a week then add lemon juice and rosemary. You can also use other spices like star anise etc. Then wait a month!!
There is also a quick recipe.....

My Jerusalem cookbook gave me the recipe. It's a lovely book but only if you like spices!
I think they make wonderful presents. If you put a red chilli in with the lemons..so pretty.

Just made the most yummy nut and seed/spice mix today!
All this Eastern cooking is costing a fortune in herbs/spices and seeds! I'm trying to not eat too many spoonful of it!
