i have 2 large holly trees with birds nesting. is it okay to trim some of the smaller branches back with out disturbing the birds ?

Depends on the birds, but most birds tend to desert their nest if disturbed, in my experience. I think it would be very wrong of you to do the pruning now when you could leave it for another month when they will have finished nesting!
