Do you dry them and use them in cooking eileen? We grow herbs with the idea of using them but but the only one I do use is mint when we have lamb

I should imagine so. Actually, thinking about it, a couple of years ago I think it was parsley we saved and used out of the garden. Gray put it in a bag and froze it. When frozen we scrunched it up so it was just like ordinary chopped parsley.

Tips on drying, I bunch them and hang out of the sun upside down three weeks. Then bottle up in little amber bottles, sometimes ziplocks. I collect just as they flower in the early morning, more essential oils. :-)

I grow and use a lot of herbs. The one I use the most is Basil, I make pesto and I freeze it in ice cube trays and then pop the cubes into a freezer container. I take out one or more when I need it and I can usually make it thru until next spring on what's in the freezer. I make a new batch of pesto every 2 weeks during the season. I also freeze peppers and use thru the winter. I make a soft cheese spread out of a mix of other herbs and keep it in the freezer to use also. It's similar to Boursin Cheese. I have lots of recipes using fresh herbs. Didn't someone suggest a section for recipe swapping, maybe we should?

Must NOT let my husband Gray see the recipe ideas!!! He'll be forever wanting me to cook all fancy things. I on the other hand, would love some recipes that I can store and use when it pleases Me!!
