love the bay tree dotty, are they evergreen, and easy to care for?

We have had this Bay now for well over 30 years, my husband plaited 3 together,it has now grown into one trunk.
It is evergreen, in the Midlands when it was very cold we fleeced it, they are reasonably tough though.
