My begonia tubers are sprouting now in the attic where I store them, when is the best time to take them from the attic and put them in the greenhouse?

The shoots are not yet on every tuber . They are very healthy looking.

You should pot them up soon but don't bury the tubers new shoots, water sparingly as they won't have roots yet. They will need light and warmth.
