after removing all the broad beans do I pull up the old plants or cut off at ground level

It is better to cut the stems of all legumes, peas and beans, off at the ground. The roots have formed nodules of nitrogen and this is returned to the soil as the roots die off. You will dig the roots out when you next cultivate the soil.
