How and when do i prune this ancient old pear tree, there that much fruit this year it has snapped some branches, thanks now for all suggestions. i have propped a couple of branches.

The best time to prune this is in November, for the time being take some of the fruit off and this will help lessen the strain on those arching branches , when it comes to pruning it you need not be to drastic, but shorten back some of those arching branches, try and aim for a well balanced tree so stand back as you are pruning it so you can get the right shape, may not fruit as well next year-but long term the fruiting will improve.)

Quite a crop there. Agree with Julien. Prune when dormant & it's 10x easier when no leaves are on the tree.
