I have three espalier apple trees, cox, Bramley and another and I'm not sure how you are meant to prune them and if now is a good time, they are well established and were pruned by someone else last year.

Steragram the link does explain that major pruning and training are done in winter but even with other types of bushes and trees there is a need to curtail excess growth in summer to allow the fruit to develop well and ensure there are plenty of spurs available to grow next years crop. Tying in branches are done in summer when the 'arms' are lengthening. It is easier to tie in the branches when they are still pliable and it prevents them growing off in the wrong direction.
