Grow some Leeks next year !

They only use a small space or a large box. Can be fitted into empty spaces in the border. Heatwaves dont bother them too much. Then make these Rissoles which freeze well in a small container for future use, make a lovely sandwich.

1 oz low fat spread.
4 ozs Leeks finely sliced with serrated knife.
One slice of wholemeal bread chopped up to make breadcrumbs.
2 tablespoons dried parsley soaked. Or fresh.
1 tablespoon dried Thyme soaked. Or fresh.
3 ozs grated Cheese – Cheddar or whatever.
2 eggs beaten with a fork.
1 teaspoon English Mustard.
Salt – amount you prefer.
Freshly ground black Pepper.
A few drops of Olive Oil in the frying pan.

Mix all together. Place the amount for one Rissole in a
non-stick frying pan. Fry gently, turning once.
Remove and place straight in the sandwich. Lovely !

Woops, sorry - forgot. Cook the Leeks in a little water
until soft, then add the other ingredients, mix well together.

Sounds nice. I have lots of leeks so might well give it a try!
I think I might fry the leeks rather than boiling them though and use the same pan for frying the rissoles.

I love leeks in mushroom soup, so delicious. Almost any kind of soup.

I love leeks and grow them usually but I didn't this year as I grew extra onions for my daughter.

That’s got the taste buds tingling, I actually grew some leeks this year, well I thought they were I lost the labels and put them in as you do with leeks, but what the heck they were onions and they grew quite well, when they came out they were oblong onions it caused a few giggles down the allotment.

Thankyou for the recipe sounds quite tasty, I actually made a huge batch of leek and potato soup yesterday, my daughter takes it for lunch during the winter months, I'm kicking myself because I forgot to show the seed last year so you have given me a very timely reminder, as you say they can be popped in anywhere, don't grow vegs as I never have done well here, leeks is one that does.....
