I planted winter onions, which are looking great, they have recently sent up a flower head. which I pinched out. can you tell me when i take them out of the ground?

When the tips of the leaves start to yellow, and die back.
This means they won't grow any larger from this point on.
You could do them sooner if you are desperate to eat some.
