After flowering, should we take off the huge spike?

Unfortunately the crown of the plant that flowered will now die, but there should be some 'pups' around the base that will grow to produce a new plant(s).

So, yes, remove the spike, if only to keep it from falling on someone. I would also remove the yellowing leaves at the base, but I would keep the barrel-shaped main stem until the "pups" show up, just so it can help feed them.
