When and how do you cut back the Cortaderia and when does it start to re grow. We have a large mature plant which I have just cut back but I am not sure whether I have been brutal enough.

Should be done in late March, so as you're a bit late, probably just as well if you weren't too severe with it. Next year, hack it back as far as possible, cut out at their bases the flowering stems, rake out the centre of the plant to remove debris.
