Are we talking Globe or the tuber type artichokes? Globe is quite a big plant with big leaves, can be 5-6 feet in good ground. Tuber type goes up to tall chain link fence height. Good against such a fence, as they enhance privacy. we had them in a previous garden. Delicious to eat and make good compost when you cut them down in the autumn.

They can get large. It also depends on if you get offsets or seeds. Not all plants from seed give good "chokes" After the main one is big enough, cut it off and smaller chokes will develop on the sides. Taste depends on how you fix them and what accompanies them, but they are kind of nutty. You might want to buy one in the store and give it a try. Even if you don't like them, they make great flowers.
