Cut the stem back to just above the lowest little 'flap' on the stem. The new flower stem may appear from there, or it may come from between the leaves. They don't usually take long, but if nothing happens in a few weeks, take the plant into a room 5-8 degrees cooler - leave it there for 3 weeks and when you bring it back, it should produce a stem.
It's a 'shock' treatment, but it works for me! Good luck.
