A tested recipe for zucchini flowers - wash the flowers and dry very carefully. Fill each flower with a piece of anchovy fillet and a dice of mozzarella cheese. Coat in a seasoned light batter and deep fry. Delicious.

Sounds lovely Terry!! I'm going to try that one as the slugs are eating the courgettes so I will only have the flowers left anyway!!

We have zuchinni here too..I love to just fry it in a pan with oil and seasonings ..mix up a little sauce with mayo, cremefraise and just about any sort of spice or added thought..even used a little tomatoe sauce with Italian spices in it at GF's for this,you then use it to put on the fried veggies..you can grill them outside too..or under the hob....yum...

Yes!! That's the problem! have some great books of JUST courgette (Zuchinni) recipes and after the weekend I will post the titles on here! I know one is called 'A glut of Courgettes' and I have a great recipe for Courgette muffins too! .... I'll probably 'Blog' on the subject next week sometime!
