Yummy pancakes with lemon sauce.

Of course Pancakes can be eaten at any time but I dont know about you, we always forget, so Pancake day is an excuse to stuff oneself!!! Lol.
1 Orange
2 large eggs
100g flour
some sugar
pinch of salt
225ml skimmed milk
2-3 drops of vanilla essence
some oil for frying.

Zest the orange, add to beaten eggs, fold in flour, sugar, salt,vanilla adding milk and stir til smooth.

Lemon sauce.
2 lemons juiced with 2-3 tbsp of sugar or less.
place this juice & sugar in a pan and heat gently til sugar has dissolved. I think you could add a little cornflour to the juice to thicken it and cut back on sugar! Just a thought.

Fry your pancake as usual, roll up onto a plate and drizzle lemon on and serve with a dollop of fromage frais.
Believe it or not these are allowed on the diet that I have to follow and dont add up to too many syns!!!! I have allowed for two of these for my evening supper!

Thank you both, as i am always thinking about my next meal, Lol, (because my hands have nothing to do!) I was planning this recipe for tea and getting the ingredients ready!! Thought I would share.

I`ve just had one Grandmage, had to make one for hubby and made too much, lol, I have Golden Syrup on mine, yummy.
My daughter counts her syns so will ask her if she `d like one, therefore could possibly have another later...

I regularly have cooked pancakes for breakfast for both my girls for the last 15yrs. at least once a week, so today it was as dessert instead.

Oh, yes, must have pancakes today! Family tradition - I make the batter and everyone has a go and then eats them whichever way they want. Jam for son-in-law, raspberries and ice cream for daughter, lemon juice sugar and a dollop of cream for me and just as they come for the wee lad. Sadly, son and wife missed out this time, as they were away. Still fun, though.

Gran, yes, the shep. pie was v. tasty thanks - OH won't tell me how he makes it (such a tease!) but the aroma was making my mouth water for ages. He cooks every Tuesday, and his repertoire is definitely increasing, lol. :))

Yes, my word you are lucky Gill! But I feel pretty lucky too, because OH always joins me in the kitchen and helps with the preparation, so that sometimes I feel like Delia, lol. And he'll quite often nip out for a take-away too, so I'm well looked after. :))
