Why would my coxes orange pippin seed s possibly produce crab apples in years to come?

The apple tree is grafted onto a rootstock which was probably some sort of crab apple. Either the variety grafted on has died back or been pruned too low and now the rootstock is resprouting. Unless there is some Cox left on the top of the rootstock, I'm afraid you've lost it...unless you want to try re-grafting another variety on it.
