Even if you blanch them beforehand they turn to mush.

What you can do is make ratatouille, or a version of, with tomatoes, peppers, onion, garlic, creamed tomatoes from the supermarket and courgettes. Start the chopped/sliced onions, peppers and courgettes off in a frying pan for few minutes, add the tomatoes and garlic, stir around for five minutes, then transfer to a large pot, add the creamed tomatoes and cook gently for about 10 minutes or so. Add basil or other herbs if you want. Cool and freeze in portions - good with hot and cold meats.

I was going to say, yes you can freeze them, but you wouldn't fancy them when they thawed out! My neighbour makes curry with hers.
