You can eat the flowers, they make salads 'pretty'.
If you don't want them you can remove them but they are good flowers for nectar drinking insects.

I love the flowers,so personally,I would leave them..They last well,so you have the best of both worlds,being able to eat both flowers and foliage , and as SBG says,they are a good source of nectar. Once the foliage starts to look past it's best,you can cut it all back,and it will regrow ,and flower again this year..
