My chitted potatoes have overgrown to about 6 inches. Should I cut the overlong chits off, or just plant it all?

Are they in a warm dark place? That would have hurried them along much too fast. If you can, try to move them to somewhere much cooler and lighter. If you cut all the shoots off now you might not get any more. If they are first earlies you should get way with planting them in another few weeks as long as the ground is not really wet. The soil needs to be getting on for 45 degrees. Might be useful to plant them a bit deeper than usual or earthing up really well to protect the shoots from frost.
