My Mother used to dry off the old flower heads and then light them to smoulder and scent the house out, they smoulder just like a cigarette

Cut off the flower stems to the leaf growth, then in the spring, give it another light clip over - don't cut into old wood, though, as Lavender doesn't appreciate this.
