If I stored peas and broad beans from this years. Crop would they germinate next year

yes but only if you leave them on the plant until the pod is fully ripe. That is when the pod dries and splits open. If you try to grow the ones you pick at the size you'd eat them then they wont as the embryo in the seed isn't fully formed.

Also they may not be as good or they may be better as many seeds are hybrids. they will still be edible though.
