Hello, my husband planted some turmeric root and kept it in the greenhouse in a container. It grew beautiful lush foliage. We were hoping to harvest some turmeric root but the roots we’ve got are very pale. Does anybody know if these white roots as per photo are still ok to eat?

All I know is that Turmeric Spice (dried and hardened in India) is very good for Arthritis. I have 1/4 teaspoon every day. Free of pain.
