is it possible to restrict the height a cordyline (cabbage plant) will grow too by Pot Size? thanks

You could lop the top off in spring and it will shoot away from the base making a multi-stemmed plant.

If you restrict the roots too much, the plant will look unhealthy - if you want something that doesn't get so tall, buy a Phormium cookanium instead - this doesn't develop a woody stem, so the growth says lower.
