I planted a Eriobotrya Japonica tree last summer and it had been lovely until a few weeks ago the leaves are becoming brown and curling in on themselves? Any idea how to save it?

It sounds suspiciously like fireblight. If so, prune back the affected branches, sterilizing the shears with 10% bleach solution between cuts, and spray the tree with a copper spray.
