My last 4 large lettuce have bolted and are over a foot tall, but my next batch won't be ready for another fortnight.
However, the tops of the old ones are crisp with good leaves so presumably they are still edible ?

You might as well give it a go, I'm sure they will tasty. You'll have trouble getting a foot tall lettuce in the fridge!
