i have a large poppy in my garden and one has a different centre to the others, is this a female and male flower and which is which

No, Poppies are dioecious. In other words each flower can produce pollen and has stigma for the reception of pollen. The flowers are both male and female at the same time.

No, they are not dioecious - that means separate male and female plants. Poppies have bisexual flowers, with stamens and stigma present.
