In fact you need to get done as soon as possible before the sap starts rising otherwise the vine will bleed. In France they prune late December and through January.

I always reckon between Christmas and New Year is the time to do it. As MG says, the sap starts to rise very early. Try a couple of cuts, and if it starts to bleed, you've missed your chance for this year.
