Let them develop fully and then if you want, cut them back to the height you would like them.
Bamboo's are woody perennials with all primary growth coming from the rootstock or rhizome. Each stem is produced in one season, often very rapidly as its pre-formed virtually in its entirety in bud form so it expands quickly to it's full height.
