You don't have to prune them though - often, the palmatum dissectum types particularly are best left to do their own thing.

What type of Acer? I am assuming Japanese maple and yes you can prune them if they need it. I would do it between Nov-Jan when it is defoliated, you can see the structure and the sap is low.
