My cordyline has a long plant looks like wheat stalks growing out the middle can I cut it out if yes where do I cut it off ?

They're probably flowers. In my opinion, they smell like an unclean gents toilet but, occasionally smell like vanilla.
They will die off naturally in the late summer and sideshoots will regrow or you can cut them off if you want but im not sure if the plant will put its energy into trying to grow more flowers.
