My Cooking Apple trees (2) have very little blossom, one more than the other, they are next to each other.

Not sure where you are but what sort of winter did you have?
and are the apples the same or compatable varieties....
also if last year was a very good year the tree could be resting.
Assuming the tree looks healthy I would give them both a balanced feed and hope for better next year
