There's often not much time between the purple buds that you eat and them opening into flowers which you don't and if you have a fair few plants they will need checking every couple of days to catch them in time. Did you add a lot of nitrogenous fertilizer to the ground? That will encourage leaf at the expense of flowers. Another year you could try cutting back on that and increasing the potash.
