how do I keep cats off my herbs

Try pushing prickly sticks in around the plants, such as Pyracantha twigs.

Try planting rue (Ruta graveolens) nearby. It repels most cats. Otherwise, angular rocks to interfere with digging. In extreme cases, crumpled up galvanized chicken wire--the herbs will cover it up, and the cats will be afraid of catching their paws in it.

egg shells , i know a neighbour 2 doors away from me put chicken wire over their bulbs to stop cats digging up their bulbs and it worked because the flowers grew through the wire. the same would work with your herbs
