I dug up a Campsis but obviously left some root behind as it has thrown up several new shoots. When is the best time to remove these to make new plants for different areas in my garden? Oh, and how?!

You need to dig very deep, excavating soil till you find the root/s where growth is coming from. Failing that, dig to expose what you can that's large enough and slash, score or drill into the wood and treat with SBK, cover with something (an upturned pot maybe) and replace the soil to kill them off.
