But not too late for red peppers! We have just visited Espelette in south west France where the famous Espelette chilli peppers come from. They are only now finishing off the harvest and drying them. If you like chillis, you really ought to try this kind, which are mildly hot and ideal for spicy cassoulet and so on, used a lot in Basque cooking.
