our tree has plenty of apples on but the branches have gone long and seem weak

Usually in the cold winter months Dec-Feb when the tree is dormant.
Cut one year old shoots back by one third to a growth bud.

3D's Dead, Damaged and Diseased prune these out.

also try and keep the centre of the tree open, to encourage side shooting branches to grow outwards. You are looking for a nice cup shape.

Side shoots usually develop apples in its second year
