Competition for the best recipe for Elderflower syrup.

This is the season of picking flowers from elder. I would like to ask you to add here recipe for syrup from elder flowers. Tested by yourself and recommended. Finally I will say who won (:))). Votes won´t be democratic and of course it will be blinded (as I am from Eastern Europe, lol). As a prize, I will write you all healing properties of Sambuccus nigra.

Good Sunday morning,

O.K. So no recipe added after several days. One might think women on this webpage do not process their garden products...Of course, with the exception of ST, who at least makes well-known chutney.
So here is at least one recipe, which I used yesterday and today for making elderflower syrup.

30 flowers (elderflower, of course)
2-2,5 litres of water
2 kilos of sugar (or let say 1 kg of sugar/1 l of water)
3 lemons
5 g of citric acid

Boil the water first. Then, why it cools down, add all flowers, which are ridden of green leaves, bugs and long stems. Cover the pot with something and let elderflower bath for 24 hours. Then drain. Then add 1 lemon cut in pieces and juice from two other lemons. Add sugar and citric acid. Then cook it, stirring until it boils and all sugar is disssolved.
Syrup is ready. While still hot, slop it to clean bottles and keep on cold and dark plays. The best lemonade you have ever drink is ready!

I last made it about 10 years ago!
Am now on a mission to find a perfect recipe for you! It was all that sugar that made me want to use honey!

That would be fine if you find some original recipe. Although honey is not suitable there, as the water must be boiled and by boiling all enzymes in honey are destroyed.I think. But may be I am wrong.
