Inga edulis - Ice Cream Bean (Inga edulis - Ice Cream Bean)

I'll be ready to go back to Balboa Park soon and eat a dozen or so of these. lol! :>) The pulp inside taste like cottony ice cream...so, so yummy!!! I have a my own tree in a pot, however, I will never put into the ground because it grows way too fast and huge! Photo taken at Balboa Park, San Diego, CA. on May 25, 2011.

The pulp inside this legume is white and cottony and taste like ice cream, hence the name. It's so good!

My tree in a pot has only produced fruit once...when its roots were growing through the hole of the pot and into the ground. I wish I had a spot to put mine into the ground...however, it would very quickly grow to 30ft/10m tall (most likely in less than 2 years).

Does this tree grow in Corfu?

Yes, it'll be soon, maybe a couple of weeks. The pods will have to turn light brown and then they'll be ready. Yummy!

Yes, to grow a nice Ice Cream Bean tree you need a huge yard.

You are naughty Delonix. I went to the garden center again today...they didn't have anything different so I bought a rose bush. The smell caught my attention as I walked by it. I still want that coffee tree, will ask them if they can order one for me....you know how it is when you get stuck on something. ;o)))

It's very true, though...Inga edulis is used to shade coffee trees in Central and South America.
