all fruit tree i.e. cherry red, apple, tengrine,apricote are suffering from black fly and the leaves are gone all black and are crumbling.

As no one has answered may I suggest you look at the RHS advice on Cherry Blackfly, you might find that helpful for your trees.
Need more information for question 2 as all soil gets hard if dry, poor or clay are some of the reasons?
