why are my green bean plants going yellow

They may be reacting to cold winds. If they are still small enough you could try cutting the bottoms off big coke or lemonade bottles, remove the screw tops and fit the bottles over the plants as mini individual greenhouses.
Make sure you aren't under or over watering too.
