Please can you tell me if it's right to take off leaves when the grapes are growing, in order to let the goodness go into growing the grapes

dont take the leaves off. They provide the nutrients/goodness needed to make the grapes grow. follow DrBobs advice regarding 'stopping' the growing tips.

You should take out the growing tips two leaves after the set bunch of grapes. Don't try to grow all the bunches, select the best depending on the size of the vine, thin out bunches in July. The bunches can be placed in front of large leaves to ripen later in the season.
