My amaryllis was left out over the summer, leaves never died back and then I spotted a fower growing... it has now bloomed... not as tall as last year... but still beautiful.... what do I do now... cut it back? leave it to die back itsself... or ?

That's very unusual! I would just cut the old flower stem off as usual, leave the leaves on, and bring it indoors to a sunny window. Since it has bloomed this fall, I would keep it watered and fed until late December, then water very little to encourage it to go dormant in it's natural season. The leaves will gradually turn yellow and die back--don't remove them until they are completely yellow, to allow the bulb to get the most benefit from their nutrients In March or April, it will start growing new leaves and flower stems.
