last September I froze some Mirabelle plums which were yellow in colour but now they seem to have changed colour to a red colour

You know the rules. If they look all right and they smell all right and they taste all right then the chances are they are all right.

They do. It is because the acid in them has reacted with Oxygen. Same thing as apples going brown when peeled. Still edible.
