I have a dwarf duo apple tree and plum tree which have grown in excess of 4 metre in height and I want to reduce both to about 2.5 metres to control them. Can you please advise.

I had something similar happen, so I just cut them back hard at the end of the growing season taking out the middle and trimming the other branches to fit the space available.
They seem to have survived well enough and so far have continued to fruit though not very heavily in the first season after pruning.
