Hi Dobbs and welcome to GoY yes you can get seed. Just keep an eye on the flower head and once seed pods start to look 'ripe' cut the stem and put in a paper bag a tie on with twine or an elastic band. Hang upside down somewhere cool and dry and the seed will drop into the paper bag once ripe.
