some of my cabbages have started to wilt (the others are growing well). What can be causing this?

You possibly have cabbage root fly. Pull up one of the wilting plants and see if there are white maggots chewing at the roots. There is no organic way to treat this and the best thing is to remove and bin or burn the infected plants.
