How do you stop leaf eating insects/beetles devastating the plants? Seems to be a different plant type each year and in a different area of the garden.

It'll probably be different pests then, requiring different treatments.Viburnum, for instance, is prone to attack by Viburnum Beetle, so its important to establish precisely which pest it is in order to take remedial action. Leaf cutter bees will take half moon shaped slices out of the edges of leaves, various caterpillars peculiar to different plants will eat leaves.
